Perfect as a main dish or as a side dish
You will need:
1 Tub Dr Broth Roast Chicken Bone Broth
1 ½ cups basmati rice
1 tin chickpea’s – drained and rinsed
Pinch of ground cumin and mild curry powder
Juice of 1 lemon
2 handfuls baby spinach leaves
½ cup crumbled feta
Salt and pepper
Method:
In a medium saucepan on the stove bring the rice and the bone broth to a simmer, keep simmering gently and stirring until the rice is soft.
Stir in the drained chickpeas, the lemon juice and the spinach with the pinch of ground cumin and mild curry powder.
Serve with the feta crumbled over
Check for season and add salt and pepper if necessary.
You can always add some toasted pumpkin seeds
