Serve with or without rice to make a delicous and healthy meal
You will need:
1 Tub Dr Broth Roast Chicken Bone Broth
1 whole Chicken
3 Lemons
1 cup Basmati Rice
Handful torn basil leaves
Steamed broccoli
2 Tbls Gourmet Greek Yoghurt
Method: Grate the zest of the lemons and cut them in half –keep the zest to one side.
In a saucepan that fits your whole chicken and cut lemons,pour in the Dr Broth Chicken Bone broth and put on a medium heat on the stove top.
Put the lid on the pot and simmer gently for an hour.
After an hour carefully take the chicken and the lemons out.When its cool enough, squeeze any lemon juice back into the saucepan and left the broth reduce until there is roughly 2 cups left.
Pour in the rice and let it simmer in the broth until it is cooked.
While the rice is cooking, either joint the chicken, or pick the meat off – however you prefer to eat it.
When the rice has cooked slightly, carefully stir in the Greek Yoghurt.
Serve the rice and chicken with torn basil leave and some steamed broccoli
