Ingredients:
Good glug of olive oil
1 medium red onion julienne cut
1 yellow pepper julienne cut
3 small cloves garlic crushed
4 bay leaves
2 leeks finely sliced
2 chillies slit down the middle
10 baby tomatoes
½ bottle tomato passata
1,5l Dr Broth Chicken bone broth
200g calamari
250g fish cut into bite size chunks
250g prawns
Freshly chopped parsley and dhanya
Method:
Heat the olive oil
Sauté the leeks, onions, garlic and peppers with the bay leaves until the onions are translucent
Add the stock, tomato passata and chillies, bring to the boil and cook for about 10 minutes
Add the baby tomatoes and cook for a further 10 minutes
Add the fish and cook for a minute, then add the calamari and finally the prawns. Cook until the prawns firm up.
Correct seasoning with salt and pepper
Add chopped parsley and dhanya just before serving
