Spicy Mushroom & Veg Noodle Bowl

This vegan broth is packed full of nutrients!

You will need:

1 Tub Dr Broth Vegan Broth

1 cup sliced leeks

1 tbls olive oil

1 fresh red chilli – chopped

1 cup bok choy – white part and leaf sliced

+- 2 tbls sliced spring onions

200g of your favourite noodles 1 tbls sesame oil

(optional –poached eggs)

 

Method: In asaucepan over a medium heat on the stove, gently soften your leeks and chilli in the olive oil.

Add the broth and bring to a simmer.

Add your noodles, and when they are ready add the bok choy, spring onion and sesame oil

Serve with a poached egg or 2 if you like .
